Keskul




The keskul is a very typical dessert of Turkey (written in turkish Keskül) based on the almond although its preparation reminds us slightly to Muhallebi (a dessert made with milk and rice flour). It is very simple to prepare.

INGREDIENTS:

  • 4 ounces of raw almonds
  • 2 pt of milk
  • 5 ounces of sugar
  • 2 ounces of rice flour
  • 1/2 cup of water
  • Grenada (optional)
  • Pistachios (optional)
  • Crushed almonds (optional)

With the blender we crush almonds in milk. Place result in a pan and bring to boil. 

Once the mix have boiled reduce heat and add sugar, flour of rice and half a cup of water. 

We stir constantly the mix for 20 minutes and then just simply let it cool to room temperature within a single pot or several pots to be cooled in the refrigerator. 

Served cold optionally garnished with pistachios and crushed almonds and even grains of grenade or mint leaves.
