Salad of tomato and cucumber with yogurt sauce

A nice salad 'dressed' with a nutritious sauce very easy to do.

INGREDIENTS (1 / 2 servings):

1 cucumber
2 ripe tomatoes
1 onion
Parsley
1 yoghurt without sugar
Olive oil
Vinegar
Juice of 1 / 2 lemon
Salt
Black pepper


We peel and remove the seeds of the two tomatoes, cutting in slices. We cut onion very thin and cast on tomatoes. We peel the cucumber and cut into slices and we incorporate to the bowl with salt, a tablespoon of olive oil and a splash of vinegar (you can substitute with lemon if you dislike vinegar). Mix well. Now let's make the yogurt sauce. Mix yogurt with the juice of 1 / 2 lemon, a pinch of salt, a tablespoon of oil, black pepper and very small chopped parsley. You can pass through the blender or leave as it is, only mixed with a spoon. If you want a more liquid sauce you can use all the juice of a lemon. We dump the sauce over the salad and ready to be eaten.
