Spaghetti with prawns


Again a simple recipe that can be prepared in a few minutes


INGREDIENTS:

Spaghettis dried or fresh
14 ounces of peeled shrimp
Parsley
Oregano
3 ripe tomatoes
Garlic
1 glass of white wine or brandy / cognac
Grated cheese
Onion
Black Pepper
Olive oil

If we use dry spaghetti pick an adequate quantity to the number of people should eat. We must think that the weight of pasta once cooked approximately doubles the original weight so that 9 ounces generate 18 ounces of pasta. We place spaghetti in slightly salty boiling water reading carefully the advise of the packet to obtain soft pasta or al dente, according to our taste. Meanwhile in a pan we will fry with two tablespoons of olive oil a clove of garlic and a bit of chopped parsley fresh or dried. Then we put the peeled shrimps and dust all over with oregano. Then we spreay with a glass of white wine or a cup of cognac and let reduce to low heat. The broth at the end of the process should be enough to keep the shrimp a bit moist. Now pick tomatoes, peel them and remove the seeds to fry in chunks in a separate pan with a little salt, minced onion and black pepper too. Reserve. Once the pasta is cooked-between 7 and 10 minutes - we will move it quickly to the pan of prawns and with a wooden spoon we will mix all ingredients, adding a little more of salt. Then we add the fried tomato, mix again, and then withdraw from fire and eat immediately, optionally with grated cheese.
