Mussels with mustard sauce
This is a very popular Belgian recipe. They are usually served with French fries.
INGREDIENTS (serving 4) :
- Around 10 mussels per person, with shell
- Half a purple or fresh onion
- 1 clove garlic
- 1 tablespoon strong French mustard
- Parsley
- Half a cup of heavy cream
- Half a cup of fish broth
- Half a cup of white wine
- Salt
- Olive oil
In a frying pan, pour a couple of tablespoons of olive oil and fry the finely chopped onion and garlic clove. When the onion begins to be fried, add the white wine, increasing the heat.
Once the quantity of wine has reduced more or less the half, we add the tablespoon of French mustard reducing the heat. It is very important that you use French mustard, which is yellow, strong and nasal. If you use soft, brown and sweet mustard the result is quite poor.
We dissolve the mustard and add the milk cream, the chopped parsley, the fish broth and the clean mussels with their shell. Rectify the salt. We cover the pan. A five minute boil should be enough. Discard the mussels that have not been opened and season with salt before serving.
Prepare a lot of bread, sauce is addictive.
