Greek mushrooms
It can be eaten as a starter or as a side and it is also as good cold as hot. As if that were not enough, it is an extremely simple recipe that is prepared in 20 minutes and costs very little money. It is the perfect dish if you are making an exotic or vegan menu (yes, it is also 100% vegan if you do not use feta cheese).
INGREDIENTS (4 people):
- 300 grams (10 oz) of fresh mushrooms
- 1 large onion
- 1 cup of white wine
- 400 grams (14 oz) of tomato crushed
- 3 tablespoons tomato paste
- 2 cloves of garlic
- Oregano
- Salt
- Pepper
- Chopped parsley
- Extra virgin olive oil
- Optional: feta cheese
In a saucepan with a generous jet of olive oil, fry the onion and the finely chopped garlic cloves (remove the germ from the garlic).
When the transparent onion is added the crushed tomato, the white wine, a tablespoon of oregano and salt and pepper to taste. Mix well and leave for a couple of minutes.
After the time has elapsed, the well-washed mushrooms are added and left to cook for 20 minutes. At the end of cooking they are sprinkled with parsley.
They are served hot, cold or seasonal. If you want you can crumble feta cheese on top which gives a perfect contrast and strengthens its Greek character.
