Bakewell pie
The "Bakewell" pie owes its name not to the way it is made (which could be) but to the fact that it comes from the town of Bakewell, in central England.
If you go to Bakewell to visit, the typical thing is to buy this pie or an equivalent pudding, each produced by two rival confectioneries that award themselves the creation of said recipe.
To summarize a bit, it is a pie with a short pastry, covered the bottom with strawberry or raspberry jam and filled with a layer of ground almonds, sugar and egg (what is called an almond cream). It's very easy to do.
INGREDIENTS :
- A sheet of short pastry (the one does not rise)
- Raspberry or strawberry jam or whatever you fancy (have a full jar handy just in case)
- 125 grams (4.4 oz) of unsalted butter
- 125 grams (4.4 oz) of icing sugar
- 125 grams (4.4 oz) of ground almonds
- 1 large egg
- 50 grams (1.8 oz) of sliced almonds
We spread the shortcrust dough in a mold that can be baked. The mold should be about 22 cm (8.6 inches) by 2 or 3 cm (0.8-1.2 inches) high.
We preheat the oven to 200 degrees (392 F), heat up and down. It is important that you do it when you start to make the preparation so that it gets the right temperature.
In the base of short pastry we spread a thick layer of jam, to taste. There are people who prefer it thin and others prefer it half a centimeter (0.2 inches). There is nothing written about it.
In a frying pan over high heat we melt the butter. When it is completely liquid, we remove it from the heat and in it we pour the icing sugar, the ground almonds and the beaten egg. We mix quickly so that it is homogeneous and before the butter solidifies we pour over the jam that we have spread previoulsy.
We decorate the surface with the sliced almond and we can now take it to the oven.
It should be baked for 30 minutes, but always pay attention to what the manufacturer of the short pastry indicates. Some say less, others more. Take that value as a reference.
Another important thing is that sometimes the almonds on the surface brown too quickly and that makes the cake look ugly. To avoid this, it is best to cover the surface of the cake with an aluminum foil.
Serve it at room temperature.
As you can see, an easy cake to make and very tasty.
