Buffalo Wings
Buffalo Wings are an iconic dish in American cuisine that consists of fried chicken wings coated in a spicy sauce made with butter and hot pepper sauce. They are known for their strong and spicy flavor. They are usually served with blue cheese dressing and fresh celery cut into pieces.
The history of Buffalo Wings dates back to the 1960s in Buffalo, New York. It is said that they were invented by Teressa Bellissimo, the owner of the Anchor Bar, along with her husband Frank. The story goes that in 1964, Teressa received a delivery of chicken wings instead of the usual parts of the chicken she used to make soup. Instead of wasting them, she decided to fry them and add a spicy sauce.
Teressa used a combination of melted butter and hot pepper sauce, thus creating the first Buffalo Wings sauce. She served them with celery and blue cheese dressing to balance out the spiciness. The wings quickly became popular and started attracting local bar customers.
Since then, Buffalo Wings have gained popularity throughout the United States and in different parts of the world. They have become a staple on the menus of many bars, restaurants, and fast-food chains in the United States. Variations of the original recipe include different levels of spiciness, and multiple flavors of sauce have been developed.
INGREDIENTS (serves 4)
- Chicken wings (approximately 2.2 lbs or 1 kg)
- Vegetable oil for frying (sunflower, canola or corn oil)
- 1 cup (200 ml) of hot sauce (such as Tabasco or similar)*
- 100 ml (half a cup) of butter
- Blue cheese dressing**
- Fresh celery
The hot sauce can be of any type, but always be mindful of your tolerance level. For example, a cup of Tabasco hot sauce may be too intense if you are not accustomed to spicy foods.
** Blue cheese dressing can be made at home, but it is also available in most supermarkets if you prefer convenience. It can also be used to dress salads and pasta, making it versatile.
Preheat the vegetable oil in a deep fryer or large skillet to a temperature of 180°C (350°F).
Wash and dry the chicken wings.
Fry the chicken wings in batches, making sure not to overcrowd the fryer or skillet. Cook the wings until they are golden and crispy, approximately 10 to 12 minutes. Remove them and place them on paper towels to absorb excess oil.
While the wings are frying, prepare the sauce. In a small saucepan, melt the butter over low heat. Then, add the hot sauce and mix well.
Place the fried chicken wings in a large bowl and pour the sauce over them. Toss until the wings are well coated with the sauce.
Serve the wings hot with celery sticks and blue cheese dressing to balance the spiciness. It couldn't be easier, right?
