Oyster Dressing Recipe

INGREDIENTS:
- 1 loaf day-old French bread, cut into cubes
- 1/2 cup unsalted butter
- 1 cup chopped celery
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 2 cloves garlic, minced
- 2 cups shucked oysters, drained and chopped (reserve the oyster liquor)
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2-3 cups chicken or turkey broth
- 2 large eggs, beaten
1. Prepare Bread Cubes:
If the French bread is not already stale, leave the cubes out overnight to dry. Alternatively, you can bake them in a low oven until they are dry.
2. Sauté Vegetables:
In a large skillet, melt the butter over medium heat. Add chopped celery, onion, green bell pepper, and garlic. Sauté until the vegetables are softened.
3. Add Oysters and Herbs:
Add the chopped oysters (reserve the liquor), parsley, sage, thyme, salt, and pepper to the skillet. Cook for a few minutes until the oysters are just cooked through.
4. Combine Bread Cubes:
In a large mixing bowl, combine the bread cubes with the oyster and vegetable mixture. Toss to combine.
5. Moisten with Liquor and Broth:
In a measuring cup, combine the reserved oyster liquor with enough chicken or turkey broth to make about 2 cups of liquid. Pour this over the bread mixture and toss until the bread is evenly moistened.
6. Add Beaten Eggs:
Stir in the beaten eggs, ensuring that they are well incorporated into the mixture.
7. Bake:
Transfer the dressing to a greased baking dish. Cover with foil and bake in a preheated oven at 350°F (175°C) for about 30 minutes. Uncover and bake for an additional 15-20 minutes until the top is golden brown.
8. Serve:
Allow the Oyster Dressing to rest for a few minutes before serving.
