Pineapple chicken made in microwave


A recipe that turns out perfectly when cooked in the microwave.

INGREDIENTES (2 servings)

  • 4 chicken breast fillets
  • 1 can of pineapple slices in their juice*
  • 2 tablespoons of soy sauce
  • 2 tablespoons of brown sugar
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of grated ginger
  • 2 cloves of garlic, chopped, without the green germ
  • Salt
  • Ground black pepper
  • Olive oil

*In their own juice, not in syrup

In a microwave-safe dish, mix the soy sauce, brown sugar, rice vinegar, grated ginger, chopped garlic, salt, and black pepper. Stir well to integrate the ingredients.

Add the chicken fillets to the mixture and make sure they are well covered by the sauce. Let them marinate for at least 15 minutes to absorb the flavors.

Meanwhile, drain the pineapple slices, reserving the juice.

In a microwave-safe plate, add a little olive oil and place the marinated chicken fillets. Pour a bit of the reserved pineapple juice over the fillets and place a pineapple slice on top of each fillet.

Cover the plate with a microwave-safe lid or use plastic wrap to cover it.

Cook in the microwave at maximum power for approximately 6-8 minutes, or until the chicken is thoroughly cooked. Turn the fillets halfway through the cooking time to ensure even cooking.

Once the chicken is cooked, remove it from the microwave and let it rest for a few minutes.

Serve with white rice or another side dish. You'll love it.
