Fagioli con salsiccia

This Italian recipe (Beans with sausage, that's the meaning of its name) can be made with italian sausage although in Latin America and Spain it will be easier for you to find the typical Argentine Creole chorizo so popular for roasts and barbecues. If you find it too strong, use some type of thick pork sausage will be more than enough.

We have used cooked beans to make a quick dish in just 15 minutes, but if you want you can use dried beans - obviously pre-soaked - although the cooking times will be significantly longer (slightly more than 1 hour depending on the type of legume).

INGREDIENTS (4 people):

  • 800 grams (1.8 pounds) of cooked white beans
  • 4 Italian sausages or Creole sausages (or bratwurst, or thick pork sausage...)
  • Half a glass of crushed tomato
  • 2 glasses of white wine (not too dry)
  • 4 fresh sage leaves
  • Salt
  • Pepper
  • Extra virgin olive oil

In a casserole with a splash of olive oil, cook the sausages or Creole sausages over low heat for about 10 minutes. They should get brown color.

After this 10 minutes we add the beans and the two glasses of white wine. Add the sage leaves and cook for another 5 minutes with the pan uncovered. Season and ready to serve.

If you find problems with the pronunciation of faggioli, see this descriptive video (at least at minute 1.21)
