Crispy pork ribs
A very cheap and easy recipe to make.
INGREDIENTS (4 diners)
- 2 or 3 spare ribs of pork
- 2 large carrots
- 1 large onion
- 1 whole garlic head or 4-5 garlic cloves
- Lard
- Salt
- Pepper
- White wine
- Water
- Bay leaf (optional)
- White flour (optional)
First we wash the ribs and season them. Next we rub a clove of garlic on them. Finally we cover them well with lard or butter with the help of a brush or similar.
In a large tray that can be baked, add the julienned carrots and onion, the head of garlic and, if you like, a little bay leaf.
We add half a cup of white wine and another of water. We preheat the oven to 190 degrees (374 F) and put the ribs in for an hour and a half, turning them after 45 minutes. If gets to dry, add a bit more of wine and water.
Now we are going to connect the grill -which is the one that will give us the crispiness of the recipe- for twenty minutes on each side -or until the grid is of an intense golden color- and it is ready to serve.
The remaining broth, a mixture of the pork fat, the vegetables, the wine and the water, can be passed through the mix blender and a tablespoon of flour added to thicken it, serving to dip the ribs if desired. I guess it goes without saying, but the garlic head and bay leaf are removed before making the sauce.
