Spicy norway lobster on sweet bed of onions

   



This is a very simple recipe that is prepared in much less than half an hour.

INGREDIENTS :

  • Norway lobster (5 or 6 medium / large pieces per person)
  • 2 or 3 onions (for a kilo / 2.2 pounds of Norway lobster) purple or fresh type
  • 1 hot chilli (chili, cayenne or whatever you usually call it)
  • 1 cup of white wine
  • 1 tablespoon of brown sugar
  • Salt
  • Extra virgin olive oil

First of all, we cut the onions into julienne strips and poach them over low heat in extra virgin olive oil. When they are transparent, add the tablespoon of brown sugar and the cup of white wine. We leave it on a very low heat, stirring from time to time, until the wine evaporates.

In a large frying pan we add a splash of olive oil and the chilli, either open or chopped depending on how you want it to be stronger or less. Give a couple of turns and quickly incorporate the norway lobsters, stirring from time to time but with care that the clamps do not separate from the body. Two or three minutes is more than enough.

To serve, arrange a layer of caramelized onion and place the norway lobster on top, although it is also possible to cook onions and them together for a couple of minutes.

The grace of this recipe is the contrast between spicy and sweet. In my opinion it is a very simple recipe that leaves the host very satisfied, obviously if the diners do not show reluctance to eat with their hands, as it should be done. Otherwise the spicy would not taste in the same way.
