Tempura pancakes
Tempura is a Japanese technique that consists of coating vegetables in a mixture of wheat flour and corn and then frying them in oil. We are going to make tempura pancakes that can be used as accompaniments to meat or fish dishes or as starters for vegetarian menus. It is easy to do, they are very nutritious and above all they are really good.
INGREDIENTS (4 people):
- 2 large carrots
- 2 large leeks
- 2 large onions
- 2 eggs
- White wheat flour
- Cornmeal
- Baking powder
- Salt
- Oil
Grate the carrots, onions and leeks (the white part). Place in a bowl and add the two beaten eggs, half a teaspoon of salt and a tablespoon of baking powder.
We are adding white flour and corn well sifted in equal parts, mixing with the vegetables, until a not very consistent paste is formed (quite liquid, do not go overboard with the flours).
In a frying pan with a finger of very hot oil we are pouring ladles of dough. They will be fried with a lot of bubbling until they are golden brown. You have to fry a few at a time and without touching. When they are golden brown, they are removed and the excess oil is allowed to drain on a rack or on an absorbent kitchen paper.
They are served hot and they are delicious.
