Eish Al Saraya

Eish Al Saraya is a very popular Arabic sweet whose base component is bread. It can be found throughout the Middle East although it is very popular in Egypt. It can be quite cloying so if you don't like very sweet, you better not do it.

INGREDIENTS :

  • Sliced bread (12 slices)
  • 2 cups of sugar
  • 2 cups of water
  • Juice of 1 lemon
  • 1 vanilla bean
  • 1 cinnamon stick
  • 1 lemon peel
  • Whipped cream
  • Pistachios (optional)

Let's first prepare the syrup. In a deep casserole we pour two tablespoons of sugar and the juice of one lemon. We put on a low heat until thick. Then we add the rest of the sugar and the two cups of water. Add the vanilla, the cinnamon stick and the lemon peel. Bring to a boil and lower the heat so that it thickens slightly and above all so that the flavoring ingredients leave their aroma.

We toast the bread slices lightly on both sides. We take a source that can be baked and we arrange a first layer of bread without the crust. We fill in the remaining gaps so that a compact surface remains.

When the syrup is ready we pour it slowly so that it soaks the bread well without excess. The bread should absorb all the liquid.

Now we mount the second layer of slices and soak again. We put in the oven 20 minutes at 180 degrees (356 F).

Once the time has passed, we extract it, let it cool down and put it in the fridge for a minimum of 2 hours. To serve it, remove it from the mold or cut a portion that we top off with pistachios and a good spoonful of whipped cream with sugar.
