Italian Dressing
It is Italian because it was created by a descendant of Italians residing in the United States who ran an Italian restaurant, but do not go looking for anything similar in Italy because this vinaigrette is neither known nor expected.
It is used both to dress salads and to marinate meat and fish, so it is very versatile. It is extremely popular in the United States where everyone is convinced that it is 100% Italian, so imagine how disappointed they are when they visit Italy and order a salad.
Like any vinaigrette, it is made up of 3/4 parts of extra virgin olive oil and 1/4 of vinegar. The rest of the ingredients are used to give it a distinctive flavor. In this case we use a standard 200 ml cup.
INGREDIENTS
- 3/4 cup (175 ml) of extra virgin olive oil
- 1/4 cup (50 ml) wine vinegar
- 1 bell pepper, finely chopped
From here everything is 1 teaspoon :
- Chopped dried oregano
- Chopped dried basil
- Garlic chopped
- Onion chopped
- Salt
- Black pepper
- Lemon juice
We mix all the ingredients and shake well. We can use it immediately but it is advisable to let it rest for at least 6 hours before using it.
Every time we are going to use this vinaigrette it is advisable to shake it well so that the ingredients are mixed again, since the solids will have settled at the bottom of the jar.
It can be stored for a long time, always out of the refrigerator.
