Lemon fritters

A fritters recipe for those who love lemon flavor.

INGREDIENTS:

  • 250g (1 cup and 1/2) flour
  • 2 eggs
  • 250 ml (1 cup and 1/4) milk
  • 50g (1.8 oz) sugar
  • The juice of half a lemon
  • The zest of the lemon peel (without the white part that would make it bitter)
  • 1 teaspoon baking powder, chemical type (Royal or similar)
  • a pinch of salt
  • Sunflower oil (for frying, it can be also corn or canola oil)
  • Icing sugar (for sprinkling)

In a large bowl, sift together the flour and baking powder. Add a pinch of salt and mix well.

In another bowl, beat the eggs and add the sugar. We mix until well combined.

Add the milk to the egg and sugar mixture and continue beating until you obtain a homogeneous mass.

Pour the liquid mixture over the sifted flour and mix everything until there are no lumps. The batter should have a consistency similar to that of a thick milkshake. We then add the juice of half a lemon and the zest, mixing well.

Heat enough sunflower oil in a deep frying pan over medium-high heat. The fritters should be able to float in the oil. We let the oil heat well, but do not let it smoke.

With a spoon, we take portions of dough and immerse them in the hot oil. The fritters are fried in batches, making sure not to overcrowd the pan so they have room to expand.

Fry the fritters until golden brown, approximately 2-3 minutes. We use a slotted spoon to carefully turn them over.

We remove the fritters that are already browned from the oil and place them on kitchen paper to absorb the excess oil.

Sprinkle the fritters with icing sugar before serving.

They are served hot or fresh and it is the same as eating a lemon but very, very sweet.
